Banana Nut Loaf

A healthy whole wheat banana loaf which is sugar, white flour and butter free! Although you would never guess as it certainly doesn’t compromise on taste. Do though make sure your bananas are very ripe, as these will be key in getting the optimum sweetness.

10 Servings. Total time 1 hour 10 minutes.

3 tbsp vegetable oil
2 tbsp clear honey
1 teaspoon vanilla extract
2 eggs
3 bananas, mashed
200g wholemeal flour
A pinch of salt
2 tsp baking powder
100g chopped walnuts
1 tsp cinnamon
1/2 tsp nutmeg

1. Set oven to 165C, grease and line a standard sized loaf tin.
2. Combine together the oil and honey, before mixing in the the eggs, bananas and vanilla. Next stir in the flour, salt, baking powder, chopped nuts, cinnamon and nutmeg.
3. Pour mixture into the prepared tin and bake for 1 hour.
