Beetroot Wild Rice Salad

Beetroot Wild Rice Salad Recipe: This salad is a great way to make that Summer meal more exciting. I made this one for a picnic, but you could easily condense the recipe for a healthy lunch.

Serves up to 8 as a side dish

Ingredients:
400g wild and/or brown rice
10 broad bean shoots
6 bulbs beetroot, cooked
200g watercress
40g fresh cress
300g pistachios
half a lemon, just the juice

Method:
1. Cook the rice.
2. Cook the broad beans: remove the beans from the shoots before adding to boiling water. Simmer for up to 10 mins.
3. Grate the beetroot.
4. When all the above is prepared, mix everything together. I always leave some greens for garnish so everything isn’t completely pink!
