Cauliflower, White Bean & Feta Salad

Cauliflower is quite often overlooked but it really shines in this delicious salad. It’s perfect as a side or even served on it’s own.

Serves 4


For the dressing:
½ tsp of strong English mustard
25ml apple cider vinegar
salt and pepper
150ml extra virgin olive oil

For the salad:
1 cauliflower, trimmed and cut into small pieces
1 can of cannellini beans
1 bunch of chives, finely chopped
1 bunch of flat leaf parsley, finely chopped
2 chicory heads, trimmed and cut into small pieces
150g feta cheese


1. Whisk together the mustard, apple cider vinegar, olive oil and salt and pepper in a small bowl to form the dressing.
2. Combine the cauliflower, chicory, beans, chives, parsley and feta in a bowl and toss together.
3. Mix in the dressing. Toss again to make sure the ingredients are well coated.
4. Season with salt and pepper before serving.
