Fake-It Egg Fried Rice

No rice is used in this recipe. What you do get though, is that same bowl of egg-fried pleasure without piling on the pounds. Its also mega healthy. A juicer is used in this recipe.

Serves 4 (As a side). Cook time 30 mins.

Ingredients:
1 cauliflower
100g frozen peas
3 spring onions, thinly thiced
1 onion, sliced
Half a broccoli, chopped
1 green chilli pepper, thinly sliced
2 cloves of garlic, crushed
2 eggs
4 tbsp soy sauce
5 tbsp groundnut oil

Method:
1.Make sure the green leaves are taken off the cauliflower, then chop into pieces that will fit down your juicer shoot.
2.Run all the cauliflower through the juicer, twice, so that it is as dry as possible. Disregard the juice and empty out the dry cauliflower remnants onto kitchen roll so it dries out even further.
3.On a high heat, heat a frying pan with 3 tbsp of oil. Now add the onions and garlic, followed by the broccoli, peas, green pepper and spring onion.
4. When the onions soften, tip all the cauliflower into the pan. Add the soy sauce and mix frequently for the next 5 mins.

5.Whisk together the eggs.
6.Create a hole in the centre of the pan and pour in the 1tbsp of oil. Now add the egg to this. Wait about 1 min and gradually mix the surrounding “rice” into the egg. Keep mixing until evenly dispersed.
7.Transfer to bowl and finish with spring onion some green pepper.
