Festive Flax & Chia Biscuits

Make sure the biscuit tin is full of these healthy, guilt-free festive biscuits this Christmas. Made from flax, chia, honey, olive oil (instead of butter) and seasoned with cinnamon and nutmeg these biscuits are perfect for the festive season. Both Flax and Chia seeds are loaded with antioxidants, fibre, protein and omega-3. These biscuits are super easy and quick to make.

Makes approximately 15-20 biscuits

Ingredients
120g wholegrain flour
100g milled flax seed
50g chia seeds
50g olive oil
140g honey
1/2 teaspoon of ground cinnamon
A pinch of nutmeg

Method
1. Preheat the oven to 180 degrees.
2. Add all of the ingredients to a large bowl and mix together. The ingredients should blend together to form a smooth paste. To judge the consistency, the mixture should be thick enough to roll into small balls.
3. Roll into small balls (15-20 balls) and place onto a baking tray (you’ll probably need 2 trays) lined with greaseproof paper. Flatten each ball. Make sure there is enough space in between each ball as the biscuits will spread once they’re heated.
4. Add to the oven and bake for 12-15 minutes.
5. Leave to cool. Serve.
