Flourless Chocolate and Hazelnut Cake

Flourless chocolate cake isn’t just a “skinnier” version… its more often much more indulgent and would make a great dessert too. This one definitely lives up to that and is made complete with a creamy topping loaded with hazelnuts.


For the flourless chocolate cake:
300g chocolate – preferably a mixture of dark and milk
200g unsalted butter
6 eggs, separated
200ml hazelnut milk
150g caster sugar

For the topping:
100g creme fraiche
100g dark chocolate
50g hazelnuts, slightly chopped

1. Set oven to 180 degrees and grease/line a round baking tin.
2. Melt chocolate with butter over a low heat, leave to cool.
3. Whisk egg yolks together with the sugar.

4. Whisk whites until stiff peaks form.

5. Add the milk to chocolate.
6. Add the chocolate to the egg yolk mixture.
7. Finally fold in the egg whites.
8. Cook for 45mins

For the topping:
9. Melt the dark chocolate (a microwave will do – making sure to mix every 15-20 seconds).
10. Mix the chocolate with the creme.

11. Once the cake has cooled, pile on the topping and scatter with hazelnuts.
