Prawn Fajitas Recipe: These healthy prawn fajitas are super quick and easy to prepare – plus they’re healthy too! Serve with wholegrain rice and tortilla.
300g fresh raw king prawns (peeled)
2 red peppers
1 bunch of coriander (chopped)
1 onion (finely chopped)
2 garlic cloves
2 Avocados (ripe)
Approx 6 cherry tomatoes (finely chopped)
1 chilli pepper
6 wholegrain tortillas
1 cup of wholegrain rice
1. Place the prawns in a shallow dish and add the juice of one lime, 1 garlic clove and half of the coriander. Leave to marinade whilst you continue with the guacamole.
2. In the meantime, mix together the avocado, cherry tomatoes, garlic, juice of 1 lime, a tablespoon of soured cream and a little chilli to create the guacamole.
3. Now that’s prepared, add the onion and red pepper to a frying pan with a little olive oil. Fry gently until soft and the onion is browned. Then add the prawns and cook until they are pink (probably 3-4 minutes).
4. Serve the Prawn Fajitas with some crunchy salad leaves, the guacamole, sour cream, warm tortilla and rice.
