Soba Noodle Green Salad

Soba noodles are packed with nutrients and make a great salad. The best part is the generous amount of sesame dressing which you can mix in after serving.

Serves 2


150g soba noodles
2 handfuls coriander, chopped
2 handfuls edamame beans
1 red onion, sliced
1 broccoli, chopped and lightly steamed
2 handfuls pea shoots
1 tsp sesame seeds, crushed

For the dressing:
1 lime, juice
2 tbsp tahini
1 tbsp sesame oil
1 tbsp olive oil
1 tbsp soy sauce
100ml cashew milk
1 tbsp honey

1. Boil the soba noodles as per direction, 5 minutes is usually the case.
2. Blend together all the dressing ingredients and put aside.
3. Construct the salad. I like to serve this one un-mixed however if you want to combine first just mix everything together in a large bowl.
4. Garnish with crushed sesame seeds.
