Wholewheat Pasta with Prawns, Tomato & Rocket

This is one of my all time favourite pasta dishes to make at home. It’s really simple, healthy and super tasty. This recipe uses wholegrain fusilli, providing you with protein and fibre – pasta needn’t be a guilty pleasure.

Serves 4. Total time 50 minutes.

500g Wholegrain Fusilli
350g fresh king prawn (finely chopped)
400g fresh plum or cherry tomatoes (finely chopped)
1 bag of rocket
1 garlic clove (finely chopped)
2 tbs olive oil
1 small glass of white wine
1 red chilli pepper (finely chopped)

1. Heat 2 tablespoons of olive oil in a large, deep frying pan. Add the garlic and fry gently until golden.
2. Add the prawns and fry for 2-3 minutes. Then add the tomatoes and the chilli. If you don’t like it too hot, go easy on the chilli. Add salt and pepper to season.
3. After 5 minutes add the glass of white wine and leave to simmer for 30 minutes. If the sauce gets too dry, feel free to add a little water every now and then. After 30 mins stir in the rocket.
6. Cook the fusilli (al dente) – once ready, drain and pour into the pan with the sauce. Mix the pasta with the sauce and serve.
